Touhou action-adventure

There should be a Touhou game following in footsteps of Ys or Zelda, shouldn't it? Possibly a multiplayer dungeon crawler in the vein of Gauntlet as well. Do you know of any?

Haven't played it myself, but Youyou Kengeki Musou takes after Ys (the Napishtim, Felghana, and Origin ones).

I'm sure there are ones that mimic Zelda too, but there are so many Touhou fangames that after a point I just stopped trying to keep track of them.

The Koumajou Densetsu games are Touhou Metroidvanias. The second one has quite impressive graphics.

Not quite what you're looking for since it's turn based, but there's a series of roguelikes called Fushigi no Gensokyo(不思議の幻想郷) which is quite fine.

On the action front the only thing that comes to mind is TH Diablo(nvm the name, it is nothing like diablo), a really low-production dungeon crawler with MP capability. It's really bad but can be fun for a night provided you're properly alchoholized and have enough touhou nerd friends to play with you.
