Is there any documentation on the protocol? If not, has anyone taken a stab at hooking a scope / logic analyzer up to it and reverse engineering it?
I'm hoping to design an ADC board to feed in analog RGB signals into digital-only jungle chips like the CXA1870S
Should be possible to use a microcontroller with ADC lines and the right clock signal for this.

I don't think you understand what "digital RGB" means in this context. It's not some kind of serialized communication protocol, it's simply 3 bit TTL digital RGB.
