Do you know if Grandia has Dolby Surround? The game's sound is designed by Skywalker Sound.

So would it be better to use stereo analog RGB SCART cables for surround sound as intended for the N64, or mod it with UltraHDMI to output digital sound?

I don't have any experience with UltraHDMI but digital sound will always sound better then analog even if the game doesn't support it. Just don't expect your N64 to output 7.1 True HD.
