Interesting theory, but I still would be careful about putting those sorts of games on a definitive list. At least make a second category for "unconfirmed" surround sound.
Then again, Super Turrican paid the fee, and it's not like that was some blockbuster budgeted game. If they could afford it, I'm quite certain Rare/Nintendo could have.

Great list, I came here to say Parasite Eve thinking it would be surely missing, but it's there already!

Do you know if Grandia has Dolby Surround? The game's sound is designed by Skywalker Sound.

Do you know also if Parasite Eve II support Dolby Surround?

So would it be better to use stereo analog RGB SCART cables for surround sound as intended for the N64, or mod it with UltraHDMI to output digital sound?

Doesn't look like either one support it but try using a surround sound field anyway. They sound great in stereo so they should also sound great in surround sound.

I don't have any experience with UltraHDMI but digital sound will always sound better then analog even if the game doesn't support it. Just don't expect your N64 to output 7.1 True HD. It's only Dolby Surround which is the most basic of surround sound fields.
