Gonna throw in the soundtrack for Quake here; that had a huge impact on me as a kid, since I didn't listen much even to classic rock.

Interestingly, John Romero writes that there was originally a different, but still ambient, soundtrack, that he preferred. Would be great to track that down.

Baldur's Gate II: Throne of Bhaal
Heroes of Might and Magic III and IV
Hitman series
Raiden DX (the PS version's "New Release" music)
Parodius series
Viper Phase 1
Image Fight
Gallop (some of the level music is longer than you'll hear in-game -- I recommend listening to the stage one theme in BridgeM1)
Tekken Tag Tournament (Ogre's theme)

And, lotsa stuff that's been mentioned already.

VGM comprises a big ol' chunk of my general listening material (no rubbish RPG town themes, mind ;)), and I don't really want to start reeling off a bunch of names, so I'll just recommend that everybody goes and listens to FOREST OF MONSTERS from Castlevania IV.

Nice! Always loved this one. I've been listening to it all weekend, and I still can't get over how silly the tune from the first "real" stage is. It's like someone got bored of writing spacey battle themes and wrote it to take the piss. I love it.

Thanks for the Gallop tip, by the way. Salamander actually has loads of extra, unused tracks in it, too. Most of them aren't very good, but it's something to geek out over...

Unreal Tournament. I love the 'Saveme' or whatever it is (DM-Morpheus BGM if I still remember)

Metal Gear/Solid series, Metal Gear 2 is the stand out in my mind.

Street Fighter III: Third Strike, I've only been playing this for a week or so, but everything about it stands out among the series.
I'm a sucker for Ikaruga's music too.

Oh my, how could I forget. And the BGM for DM-Turbine! I recall loading up the demo in my ancient Diamond Monster Fusion, lol (yeah, 3dfx) and it was a blast because it ran full speed and it was incredibly addicting. What they were thinking later on, jeez. At least UT2k4 makes up for the somewhat uninspiring tunes with its built-in music player. I mean, there was awesome and 'awesome' but that music player was a whole new level of awesome back then.

I forgot to mention that the Rockman X4 songs have a great '80s feeling, I really like it.

Mmm, Vagrant Story now that I think about it.

Aye, MG2's soundtrack is pretty mindblowing. I think The Front Line might be my favourite track, but it's an incredibly tough call.

Sonic CD [Japan], Dangun Feveron, and Sonic Adventure 1 and 2.
Oh, and Mega Man 2.

Sonic CD's PAL/NTSC-J BGM is so much better than the US version. Fuck Spencer Nielson.

This is my favourite version of the Gradius soundtrack. I still don't know how to link to specific times in YouTube vids, but the tune starting at 5:53 (stage 6 in the original game) owns my soul.

In no particular order

Zelda series (OoT being by far the best)
Castlevania series (NES tunes being the best, though Bloodlines is almost equally great)
Final Fantasy 5 and 6
Dragon Quest series
Earthbound (still haven't played Mother 1 or 3...)
Fire Emblem 4
Seiken Densetsu 3
Star Fox (SNES)
Legend of the Mystical Ninja (SNES, haven't played any other Goemon games)
Metroid series (especially the original and Super: fits the game perhaps better than any other soundtrack)
Mega Man (NES games)

And I feel like I should note my favorite shmup soundtrack: Dogyuun.

Yeah, the symphonic suites are the way to go. I think it's some of the only videogame music that people who don't play games truly appreciate. I hooked a few of my music major friends up my symphonic suite cds, and they all loved them; something most of them have never said about any other VGM I've sent them. I'd be tempted to say that Sugiyama is the best composer in the videogame industry, except that he has a less diverse output than Koji Kondo. If he's not my favorite, he's my second favorite. It varies from day to day.

I have a whole lot of favourites, I´ll mainly mention rather unknown and not already mentioned ones.

Sonic the Hedgehog (Master System) - Way better than the first Mega Drive soundtrack.
The Game Gear Shinobi (GG) - My absolute favourite music from any 8 bit system. Yuzo Koshiro rules!
The Smurfs (NES) - I´m not kidding: Best NES soundtrack along with Contra and Castlevania. Bare childish at all, great melodies.
Astérix & Obélix (SNES) (SNES) - Again Alberto José González. His best work.
Donkey Kong Country 2 (SNES) - Best soundtrack ever? I suppose...
Battletoads (Arcade) - Rocks. 8)
Rocket Knight Adventures (Mega Drive) - KILLER boss theme!
Sub-Terrania (Mega Drive) - Great use of the MD sound chip, awesome compositions as well.
Slap Fight MD - Yuzo strikes again!
Giga Wing 2 (DC) - Epic.
MDK 2 (DC) - Can´t stop listening to this tune. The electronic music is awesome, too.
Resident Evil -Code: Veronica- (DC) - Haunting.
Thief: The Dark Project (PC) - Mostly very atmospheric ambient, this is some of the more uhm "aggressive" stuff.

Pretty much anything by Hyakutaro Tsukumo get my thumbs up, from the original chippy stuff to the heavy guitar stuff.
Been blasting the Hyper Duel AST "Absolute Area" out of headphones lately, and tracking down any remixes that might be around. This remix of Black Rain is pretty good.
