The resolution options here are not to adjust the output resolution of the XBOX360, but how the game will be displayed within the user interface (borders). i.e. if you are running your XBOX360 @ 720p (1280×720 pixels) you can display the game (240x320 pixels, native) double sized (480x640 pixels) and still fit within the borders with spaces around the image (40 pixels above and below the image) (you could go even bigger in tate). Notice in the video how when the player selects 640x480 the side note says "DOT BY DOT." That is because every original pixel is present in this perfectly double scaled resolution.
Under Game Settings>Smoothing, Nearest Neighbor is avail., which means we will be enjoying unfiltered pixelly goodness
I also noticed that under Game Settings>Game Speed, they put in options for:
60 FPS
54 FPS (TRUE)
54 FPS (BLEND)
54Hz was the native refresh for the original hardware (hence the image shift problems some people experience when playing on superguns).
