I just got a JP Slim S...and it's a lovely looking machine.
However, I can't seem to find a component cable for this thing. And the one I have for my other Xbox 360 won't fit.
Is there a cable...adapter...or anything at all that can get around this?
EDIT: It's an E.

How's that ? You got a standard slim unit, not one of the new E models, right ?
I got a bunch and use VGA and component cables on them regularly. Never changed my cables since by launch unit many years ago. Only the E model dropped the analogue output.

It's an E. Sorry about the mistake.
Anything to do for it?
I guess a better request would be....I want to use component, but at 720p. Any devices to help me achieve this? Maybe an adapter? HDMI to component even?

On an E model your only chance is a HDMI to component converter, like a HDFury or a cheaper clone.
Most people won't miss the analogue output, but the missing SPDIF audio output was a real let down.

Re: Xbox 360 Slim E....what to do about component?
Just checked out the HD Fury site.
I see there's a number of options. What would I need to basically just turn HDMI to component, and have some RCA stereo sound coming out of it? What model would be best?
The output seems a bit strange as well. Looks like VGA.
Does this introduce any input lag?

The HDFury units are certainly your most expensive option. There should be a lot of chinese converters for less than a third of the price. The HDF use a HD15 output for RGBHV and component. A breakout cable for component is included. Audio is provided through a 3.5mm jack (not on all HDF units though - I think).
Some thing like this http://www.ebay.de/itm/Ligawo-HDMI-zu-C ... 53f5ec05d5 should be fine. You just have to check under which brand they're available in the US.

It seems is better to avoid the new Slim E revision, for now, until the stock of old slims is gone. The console inside is the same, but cost cheaper.
