Why are the shoddy CAVE ports so expensive?

Emulation is better for the core games, across the board. Better graphics, tremendous configurability, better practice options (savestates > all).

Now if you want arrange modes and soundtracks and other stuff, or you want the true PCB/arcade experience that's another story.

There are resolution and timing differences between the two modes, yes. If you can adjust the picture to fit your TV using the service menu, you should use TATE mode for DDPDOJ and ESPGaluda to match the original arcade resolution.

Thanks nZero, that's good to know!

[edit]: not sure f it was mentioned yet, but Donpachi for Saturn is a shoddy port and is on the cheaper side compared to most alternatives on the system.
