I recall eating some rattlesnake meat cooked over a camp fire once. It tasted a bit like chicken except it was all white meat. Some folks would chicken out if dared to eat it though.

This thread reminds me of a guy in the UK whom survives on eating roadkill.

Have to say Ivory-Billed Woodpecker. I'd like to know i could very well be eating the last of a species. Assuming it isn't already extinct, which is quite possible. Plus birds like that usually barbecue nicely.

I don't think any manatee's are endangered. Most are in the 'vulnerable' status (according to Redlist) so you'll need to eat a LOT of them.

As far as extinct animals, you guys gotta push for cloning animals with extant genomes. I'm pretty sure they've salvaged the genome from mammoths, so you might have something to work with. Unfortunately, I think the Tasmanian tiger genome denatured.
