I am considering buying a custom stick from this website to use with my ps2/ps3

I'm not so much worried about the price, I'm just more curious about whether I should go with Sanwa or Seimitsu parts. I like the fact that he uses wood for the chassis, and overall they look like they are made really well. The two Ikaruga sticks he made are sick.

I'd say the Seimitsu stick has a VERY slight edge over the Sanwa for shooters. However the Sanwa is more suitable for fIghters & general use than the Seimitsu.
As far as buttons go the Seimitsu's are a bit tougher to press, some people complain about accidentally dropping bombs with Sanwa's however I can't say I've ever had a problem with them, I actually prefer them.

3rd for the Seimitsu sticks.
Hewitson is bang on the mark about the buttons. Sanwas take only the lightest touch to activate, Seimitsu need to be pressed in a little further and have a bit harder bounce. The Seimitsus are flat-topped, whereas the Sanwas are convex. I prefer the bounce of the Seimitsu.

There's a poll thread over on shoryuken.com about what kind of stick people use and Seimitsu actually has an edge on Sanwa (both with square gate that is) for most popular last I checked, but then again I suppose there is a decent amount of cross-over with this forum. I'm for Sanwa; much better performance for me in 2D fighters due to smoother rolls. Seimitsu feels better reaching for the corners though. Square gate is the way to go regardless of manufacturer. Don't bother with an optical stick.
I personally don't see any reason for using Seimitsu buttons unless you prefer the more diverse color selection (which is why it appears most people go for them). The flatter buttons feel sort of odd (the flat snap-ins much more so). That extra resistance may end up costing you in terms of input time.
Then again, Seimitsu is slightly cheaper so if it doesn't make any difference to you, you may as well just go all-Seimitsu.

For me... I think it all depends on whether or not you want an Octagonal Restrictor Plate for a Square Restrictor Plate. The Seimitsu only offers a square plate, the square plate locks into all the corners of a stick. The Sanwa offers a square plate by default, but also offers an octagon plate, which will lock in the four corners and the four cardinal directions. However, when the Sanwa is modified with the octagon plate, it COMPLETELY FAILS THE THROW TEST.
What is the throw test? Hold a stick to the left, and let go... does it snap hard and hit the right switch? Sticks with square plates, both seimitsu and sanwa always pass the throw test... but when the sanwa is in octagon plate mode, it always fails the test.

I'd put in a vote for the tighter, shmup friendly throw of the Seimitsu sticks too.
With regard to buttons, if you're a clumsy oaf like me, Seimitsu's hard press buttons (PS-14-GN) offer something over Sanwa's buttons. The OBSF-30s and OBSF-30RGs by Sanwa are very sensitive, and a little to easy to press accidently with one of my stick customised set-ups.
PS-14-GNs take a little more of a definite press...
