I'm a bigger fan of Verticals over Horizontals, but in general I like Horizontals that play like verticals (i.e. games where you generally don't memorize layouts, terrain generally doesn't get in the way, etc).
So my favoriate is probably Psikyo's Sengoku Blaede (sic). It feels a lot like Strikers turned on the side. Great art direction and nice atmosphere. Standard Psikyo gameplay (which I love).
I dig the Thunderforce series... especially TF3, TF4 and TF5.
I've also grown really fond of the Gradius series... specifically Gradius I, Gaiden and V. My fav here is Gradius Gaiden on the PSX.
I generally don't like R-Type as much as most others here... but for some reason the slower paced R-Type Final has been very enjoyable for me.
Border Down for the Dreamcast is, of course, amazing. I ran the high-score thread back on the old shmups board and was an early advocate of what is one of the best horizontal scrolling shooter games to grace any console.
Gate of Thunder for the PC Engine is a MUST play horizontal shooter. It gets just about everything right.

These are the title I have been playing more regularly as of late. I have a special place in my heart for the Turbo Grafx R-type, even with all its flicker- I bought this game new in 1990 for the whooping price of $69.99(plus tax) at TRU and well at the price I put ALOT of time in it.
I recently got Last Resort for the AES and am truely amazed at this game for a 1992 game. Its tough(for me) but I just enjoy the punishment.

mmm... that's about it really. R-Type and the like have never clicked with me, and I'm not much of a Gradius fan. Somehow I still like the hori levels in Salamander and Salamander 2 though.
I still need to try Gate and Lords, seeing as they're allegedly somewhat Thunderforce-like.

You seriously need to try both Gate of Thunder & Lords of Thunder on the PC Engine Duo or the Turbo Duo platforms...they are, indeed, legendary side-scrolling shmup titles not to be missed... ^_~
I love that ol' arcade shmup classic that was released in the USA under the name of "Hyper Dyne Sidearms" -- the armored mecha featured in that arcade game were taken from two different anime series: Machine Soldier Dovack - Power Armor Suit and Super Dimensional Southern Cross Calvary

Yes, you're right, it was the basis for the 2nd of three different anime series for the USA version of Harmony Gold's Robotech series -- the other two were Super Dimensional Fortress Macross and Genesis Climber Mospeada anime series. ^_~
As for the Mospeada related merchandise, it really didn't sell very much and thus it was imported to the USA to see if it would sell there...did much better sales wise in 1984-1986 when Hasbro's Transformer craze took off in late 1984 time period.
Anime Factoid: The mecha designer who created the Macross Valkyrie mecha toy did the Mospeada's Alpha Fighter mecha toy as well. ^_~
