Ultima VII. Your companions — Dupre, Shamino, Iolo, you can choose from about 10 of them — follow you around in that game, so in ShmUltima VII they would be your options. As you shoot your way across Britannia, adding them to your party increases your firepower in a unique way (Iolo shoots arrows, Dupre throws axes, Jaana has a magical laser), but each time you are hit you lose one until it is only the Avatar left.
I'm hungry for more fantasy-themed, on-foot shmups, so this one is pretty blessed for me.

Lunacid, a PSX-era inspired lowpoly RPG.
In Shmupcid, you travel across foggy, barren wastelands inhabited by strange giant snails, weird undead aberrations, shooting magic spells as you try to lift the curse the moon cast upon the world. The final boss is a weird woman-shaped moon goddess throwing magic fire and blood tears to you.
Well, sounds really cool.

Great idea!
Shadow Tower (FromSoftware's 1st person Dark Souls predecessor) converted into a creepy vertically orientated shmup through the depths of the worlds within the tower. I guess your character can fire off arrows and magic as well as swipe with weapons and block with breakable shields.
Stage 1 Human World (Tombs, jails, torture chambers, undead and slimes)
Mini boss: Fanged worm (big snake poking out a hole)
Boss: Skeletal Guardian (floating skeletal thing)
Stage 2: Earth World (Mines, poison, crystals giving light in the darkness, plant based enemies)
Miniboss: Weird laser shooting pineapple on a stand
Boss: Appollon ( Cursed Knight with a creepy extending left arm)
Stage 3: Fire World (lava temples & caves)
Miniboss: Jinn Lord: fire magic shooting genie
That's as far as I have got in the actual game, but according to the guide I bought we have a definite boss to each world and a theme to each:
Stage 3 boss: big bronze knight
Stage 4: Water World, boss mage and pleiosaur-like thing
Stage 5: Illusion World, boss: jester like mage
Stage 6: Beast World, boss: odd looking segmented demon warrior
Stage 7: Death World, boss: cloaked lich like fellow
Stage 8: Final bosses consisting of a big knight who transforms into a demon lizard-like warrior before facing the giant melty monstrous king as the TLB.

Transformers: Shmupastation
G1, obvs.
Choice of Autobots- Optimus Prime, Jazz, Hound, Mirage, Sideswipe
It plays kind of like Mercs so there's an energy bar, it's ground based and you mostly run around in robot mode with a ranged weapon shooting shit but you can do a short range, high power melee attack like in Gunbird 2.
You can transform into vehicle mode if you want, speed increases slightly and you can ram enemies but you lose the melee attack while in vehicle mode. You take less damage in vehicle mode too. Possible Gaelco 'World Rally' type stages too?
Three button control scheme, so nice and easy to get your head around; fire (hold to charge the melee attack), secondary weapon (bomb/grenade/missile/megacrush sort of thing, limited ammo) and transform.
The different characters have different speeds and weapon strengths and different endings but the game can be completed with any character.
There are generic 'Decepticon' zaku and I suppose the level bosses could be Starscream, Soundwave + cassettes, Megatron, Shockwave, Insecticons, that sort of thing.
It's proper 2D sprite work too.

Operation Wolf Returns: First Mission. The final boss battle against General Viper’s plane is now a battleship raid similar to R-Type as well as the final bosses of U.N. Squadron and Carrier Air Wing.
