Heyo! I did a search and couldn't find anything on this subject, so I've been capturing plays of my pcbs and noticed when trying to capture footage of Donpachi and DDP, the colors are all oversaturated and I can't get them looking the same as on the cab. Other games, Ketsui, Mushi, etc have no issue with the default settings on my capture device, (It's an old Startech Usb S-video capture dongle btw), could it be the oddball refresh rate? I haven't tried any Seibu stuff yet but I'm curious if the 56hz refresh rate will do the same. Any ideas?
PCB--->Sanwa VC-J2--->Startech Usb Capture--->AmarecTV--->OBS 32 bit, this is the chain of command btw

Re: Capturing Donpachi and DoDonPachi with Sanwa VC-J2 issue
In general I have to adjust the RGB out on my video converter depending on the PCB type, but you might have some luck also trying out my swap trick - boot up a PCB that works correctly with everything and start your capture software recording, leave it recording, power down the PCB, swap to Dodonpachi, power it up, and the capturing should/might look correct. It can trick it into keeping the previous sync.
You might also want to try a JROK sync board.
