Using the void bomb holds medal value though I believe, perhaps in said videos they were using that?

Silly question, but does the Steam version of Deltazeal offer any way to play as the 2P ship without having a 2nd controller plugged-in?

Yes, you have to hold X first (autofire button), then press A (shot) when selecting the stage/gamemode. The 360 version, which precedes the Steam port but shares the UI, has the same option as well.

Side note: The Steam version's digital cards supply the boss names.
St. 1: Transport Imitation (I think they mean Transport Tracer; it spies on methane hydrate shipments and sends their locations to the MH. Pirate's fleet)
St. 2: Wild Tank (rendered as Tank the Wild's...but that's st. 3B's name. Did they get their fields mixed up?)
St. 3A: Ray
St. 3B: Moving Fortress
St. 4: MH. Pirate (i.e. Methane Hydrate Pirate)
St. 5A: Steel Elephant
St. 5B: Great Twin Blade
St. 6: Terant
St. 7: 9th Lost
