Theoretically: it probably will change a way the electrons travel along the wire
Practically: you probably will not notice any changes in picture quality.

But is this really needed? If you're building perfect home setup at your place I would split audio signals inside SCART connector. Yes, you'll have to solder 3 wires, but you get flexibility because around that output SCART you can build any configuration, BNC, 3.5 jack, RCA, etc. And you can control the quality of your cable yourself.
On the other hand, let's say I will decide to add separate audio jack, what should I use, 2 RCA's or 3.5? Or maybe 6.35 because it's more "audiophile"? Personally I'd go with 3.5 because it's small and neat, but some of you will probably ask about RCA and somebody will say "use 3.5 to RCA adapter". And in this case you may ask if such adapter will not change audio fidelity
