Ultimarc (the people who make the iPac keybaord encoder for MAME, and ArcadeVGA for connecting PCs to real low-res arcade monitors) now have Playstation and XBox to arcade converters:
http://www.ultimarc.com/xba.html
Very simple stuff. Just plug it straight into your XBox, and fire it up. Your XBox will need to be set to RGB mode, and 480i only (no hi-def modes, and no YPrPb). The results are great.
If you don't want to buy pre-made, you can hack your own:
http://www.mameworld.net/pc2jamma/
You can hack SCART output of most game consoles to input into arcade monitors (SCART normally outputs 15KHz RGB, which is perfect for arcade monitors). You'll need to build an LM1881N sync separator circuit, but these literally cost less than $5 in parts. The SCART cable itself will probably be the most expensive bit.
Happy hacking. Make sure you post some pics of your setup in action when you get it going!
