Wouldn't be that hard if you think about it. guitarists never look at their guitars when playing...or shouldn't at least

Dude, even most professional guitarists will eyball what they're doing from time to time. Pay attention to some live footage, especially when the guy's throwing down a solo.
Although yea, sometimes you can just go by feel. It doesn't make someone "better"... though it seems thats what you guys are implying here.

Well, they're apparently making a GameCube DDR featuring Mario, but that's about as close as we're likely to get to that.
