When it comes to 2D vs 2.5D, I love both if they're done well. R Type Delta is one of my all time favorites. Sure it feels a little less precise due to the shifting view of the 3D models, but overall I love the look and the feel of the game. And I'll even go so far as to say it's aged well.
Not a shmup, but I also love Ghouls and Ghosts for the PSP. Great use of 3D on a 2D plane. Sad this game never got brought over to a console.
I'd like to see some more modern indie games take on this classic PSX Saturn era 3D look.

Probably a lot like Darius Burst or Eschatos.
Eschatos is this cool mix of new and flashy with being intentionally retro with UFOs and Invaders and shit, and Darius Burst's short (but numerous) routes and chronicle mode seem targeted for a modern audience.
