I wonder if the interviewer has given any thought that stretching the definition of demake in such sense makes basically almost every console port prior to 1995 a demake...

I love reading stuff like this! One thing that I wish they had done, with regards to an increased cart size, was to include more music. David Whittaker's take on the tracks he interpreted for the GB version were good for the hardware...there just weren't enough of them! Only 2 songs, essentially, that flip-flop back and forth between stages, and a couple other small tunes, and that's it. It would have been nice to have full interpretations of the music for every stage they programmed.

The rumor about Japanese devs turning down a Game Boy port because they thought it was impossible doesn't sound very credible, but it's appropriate that the person who brought an arcade game to a 2-color platform was a Spectrum man.
